Homemade Hash

A delicious sweet and savory dish with only 5 ingredients. Great for breakfast, lunch, or supper; and you can customize it by adding more ingredients to it! Can be made dairy free, soy free, and gluten free!

Ingredients:

1 medium/large white onion
1 lbs hot and spicy ground breakfast sausage (nitrate, nitrite, and msg free preferably)
1 large/extra large yam (commonly referred to as a sweet potato)
2 cloves garlic
2 tablespoons butter (I use earth balance soy free buttery spread to make it dairy and soy free)

Directions:

Slice your onion into thin slices and mince garlic. Heat butter/spread in an electric skillet or high sided stove top skillet. Pour in onions and garlic and saute lightly until onions start to brown lightly. Peel and slice yam into small bite size pieces. Add yam to cooking onions and garlic and saute for about 5 minutes or until yams are half way cooked. Move yams, onion, and garlic to the sides of the pan to make room for ground sausage. Add in the sausage and brown thoroughly. Once sausage is completely cooked through, stir entire dish together and serve immediately.

Optional additions: Scrambled or fried egg, mushrooms, or green onions.

I love this dish right out of the pan. My husband likes his with Siracha hot sauce. This will serve three adults comfortably. Enjoy!
