Baked bacon

Ok so this isn't so much a "recipe" per se. This is just my favorite way to make super yummy crispy bacon without having to fry it!

Ingredients:

1 package of bacon

Directions:

Line a large baking sheet with foil (helps with easy cleanup). Place a cooling rack over the foil and place your bacon on the rack. Bake at 375 degrees farenheit for 15 - 25 minutes to desired crispness. 

That's it! Your done! Enjoy your yummy crispy bacon! Yum!

Banana Ice cream

Hold on to your seat! This is the EASIEST ice cream recipe ever. I'm totally serious and the best part? It's healthy and dairy free! On to the recipe!

Ingredients:

3 or 4 frozen peeled and sliced bananas

Directions:

Place your frozen peeled and sliced bananas in your super awesome bender or food processor and process away. Stop every so often to scrape down the sides. You're done! Enjoy your healthy, dairy free ice cream!

I like to add peanut butter to mine in the last few seconds of blending. It's ooooh so good! 

Usually serves two adults.

Garlic roasted Brussel Sprouts & Mushrooms

This is one of the yummiest side dishes I've made in a while and it was super easy!

Ingredients:

1 lb fresh Brussel Sprouts
1 package fresh mushrooms
3 cloves of garlic
1/4 cup olive oil
Salt and pepper to taste

Directions:

Preheat oven to 350 degrees Fahrenheit. Thoroughly rinse your brussel sprouts in cool water. Remove stems and cut in half. Toss into a large bowl. Mince or chop garlic well and toss in with brussel sprouts. Add package of sliced mushrooms. Drizzle oil over brussel sprouts, mushrooms, and garlic, and mix well. I used my hands for this but a large spoon works well too. Next add some salt and pepper. I added about 1/2 tsp of sea salt and a few good shakes of black pepper. Mix well with a large spoon.

Pour the contents of your bowl onto a foil lined baking sheet. And spread your garlicky smelling yumminess out evenly. Bake at 350 for approximately 25 minutes or until brussel sprouts have a medium tenderness in the center. 

I like my brussel sprouts to be slightly firm still and 25 minutes at 350 hit the perfect texture for me. I hope you all enjoy this recipe and leave me a comment if you try it!

Super easy Peppers and Shrimp

This is a super easy recipe using brightly colored bell peppers, garlic, onion, and shrimp.

Ingredients:

1 yellow bell pepper (seeded and sliced)
1 red bell pepper (seeded and sliced)
1 orange bell pepper (seeded and sliced)
2 cloves fresh garlic (minced)
1 medium/large white onion (sliced)
1 package precooked shrimp

Directions:

Add preferred oil to skillet to and stir in onions and garlic. Lightly saute until onions barely begin to turn translucent. Add in shrimp and bell peppers at this point and continue to saute. Once shrimp is heated through, you are ready to eat! I eat mine exactly as is out of the pan (obviously I put it on a plate first, lol). My hubby likes to eat his in a tortilla sort of like a shrimp fajita. Yum!

Optional additions: Sour cream/plain greek yogurt, green onions, Siracha, or sweet chile sauce. Enjoy!

Homemade Hash

A delicious sweet and savory dish with only 5 ingredients. Great for breakfast, lunch, or supper; and you can customize it by adding more ingredients to it! Can be made dairy free, soy free, and gluten free!

Ingredients:

1 medium/large white onion
1 lbs hot and spicy ground breakfast sausage (nitrate, nitrite, and msg free preferably)
1 large/extra large yam (commonly referred to as a sweet potato)
2 cloves garlic
2 tablespoons butter (I use earth balance soy free buttery spread to make it dairy and soy free)

Directions:

Slice your onion into thin slices and mince garlic. Heat butter/spread in an electric skillet or high sided stove top skillet. Pour in onions and garlic and saute lightly until onions start to brown lightly. Peel and slice yam into small bite size pieces. Add yam to cooking onions and garlic and saute for about 5 minutes or until yams are half way cooked. Move yams, onion, and garlic to the sides of the pan to make room for ground sausage. Add in the sausage and brown thoroughly. Once sausage is completely cooked through, stir entire dish together and serve immediately.

Optional additions: Scrambled or fried egg, mushrooms, or green onions.

I love this dish right out of the pan. My husband likes his with Siracha hot sauce. This will serve three adults comfortably. Enjoy!
